Cooking with Friends:Southwest Chicken Burritos & Stuffed Jalapeños

Hey Lovers! I'm back with another episode of CWF! And I've decided to up the ante and make this one Hot & Spicy. It's finally spring time and I'm getting us ready with a refreshing peach ginger Margarita and inviting the incredible chef Yaya to throw down in my kitchen. She's teaching us how to make Southwest chicken burritos and stuffed jalapeños that will have you wanting to slap your mama! Like they are that good! I've always been a lover of Mexican food and very curious on how to roll a perfect burrito. Well lets just say I definitely get my Mexican fix this episode and with a lot of practice I'm now a burrito rolling expert. Well,not really but I sure did try lol. But anyway, let's quit the small talk and get right to all of this deliciousness we managed to cook up.

Peach Ginger Margarita

Ingredients:

  • 1 cup of fresh peaches

  • 1.5 oz lime juice

  • 1-3 cubes of ice

  • Add ginger to fit taste (2-3 cubes)

  • Splash of peach nectar

  • 1 tablespoon of honey

  • 1.5 oz of silver tequila

  • Salt (for rim)

Preparation:

  • Toss all ingredients into your blender

  • Blend

  • Pour into a glass with a salted rim

  • Garnish with a fresh peach slice & Rosemary Sprig

Pico de Gallo

Ingredients:

  • 1 fresh tomato diced

  • 1/2 onion diced

  • Chopped cilantro

  • 1/2 cup of pickled jalapeños

  • 1 lemon

  • Garlic powder

  • Goya Adobo

Preparation:

  • Mix all ingredients in a bowl

  • Sprinkle Garlic powder to your specific taste

  • Sprinkle Goya Adobo to your specific taste

Guacamole

Ingredients:

  • Avocados (4)

  • 1 tsp salt

  • 1tsp black pepper

  • 1 tblsp garlic powder

Preparation:

  • Cut and remove the pit and place in bowl

  • Use fork to mash avocados

  • Add your salt,pepper and garlic mix altogether

  • Squeeze 1/2 lemon juice to prevent color change of avocados while refrigerating

Stuffed jalapeño

Ingredients:

  • 3 jalapeños

  • 6oz cream cheese

  • 1 cup shredded mozzarella

  • 1 pack uncooked pork sausage

  • I/2 pack of bacon

Preparation:

  • Fry bacon, let cool, then break into pieces to create bacon bits

  • Cook pork sausage on medium high until golden brown then let cool

  • Split jalapeños in half leaving the stem on

  • Remove all seeds from jalapeños (with gloves)

  • In a bowl mix sausage and cream cheese together

  • Take a tablespoon to guide the filling into the jalapeño shell

  • After stuffing each jalapeño top with mozzarella and place on baking pan

  • Bake at 350 for approximately 12-15 minutes or until the jalapeño reaches the texture you desire ( we recommend keeping them in until they are a bit golden)

Top with cooked bacon bits

Southwestern Chicken Burrito

Ingredients:

  • 1lb chicken breast (thick piece)

  • 1 Pack of corn on the cob

  • 1 Can of black beans

  • 1 cup white rice

  • 3 packets of Goya sazon

  • 1 bottle of Goya Adobo

  • 2 tbsp Garlic powder

  • 2 tbsp cumin

  • 1 Can diced tomatoes

  • 10' flour tortilla shells

  • 1 jar of Queso Blanco

Preparation:

  • Fill 6 qt pot with water

  • Add chicken breast(s) to water

  • Add 2 tbsp of garlic powder

  • Cook on medium high until chicken breast is white and tender (When fully cooked take chicken out of the pot and let it cool Do not drain water After cooled)

  • Shred chicken and add it back to the pot

  • Add 2 packets of sazon and 3 tbsp of adobo

  • Cook white rice in a separate pot

  • Once rice is cooked add it to your pot

  • Add 1 packet of sazon and 2 tsp of adobo to the pot

  • Boil 2-3 pieces of corn in a separate sauce pan

  • Once corn is boiled let it cool and cut it off of the cob

  • Put your black beans, diced tomatoes, corn, 2 tbsp of cumin, 1 tsp of adobo into your pot and let it come to a boil

  • Boil for 10-15 mins

  • Let it cool

  • Time to fill your burritos

  • Lay tortilla flat

  • With a spoon place chicken mixture in the middle of tortilla (do not overload)

  • Fold 2 ends together leaving the closest side to you straight

  • Once sides are folded use the piece closest to you to roll away from you tucking in the edges as you go along (watch CWF video for demonstration)

  • Place 1 tbsp of oil in a skillet on medium high

  • Heat up for 2-3 mins

  • Place rolled burrito in your skillet to get crispy on each side

  • Once golden on each side place burrito in a baking dish

  • Pour queso fresco over burrito to your liking

  • Place in oven at 350 for 10 min so cheese can melt

  • Let sit for 2 min

  • Add Guacamole, Pico, and Sour cream on top & enjoy
