Cooking With Friends: Catfish Atchafalaya

It's episode 2 of CWF and it's definitely getting HOT in the kitchen as we pay homage to one of my favorite celebrations, Mardi Gras! I'm whipping up a boozy Hurricane cocktail and seasoning catfish to perfection, Cajun style!  Not to mention I'm being guided under the expertise of Louisiana native Brian Jordan.Well, let me not lie he's doing more than "guiding". I'm pretty much assisting Brian as he makes this delicious dish. Hey, there's no shame in my game because that's what Cooking With Friend's is all about. So without further ado let's get into all of this Mardi Gras deliciousness! 

 

Mardi Gras Edition

 Hurricane Cocktail

 

1 oz of lime juice 

1 oz of orange juice 

1 oz of strawberry liquor

1 oz of dark rum 

1 oz of white rum

2 oz of passion fruit juice

.5 oz agave

splash of mango nectar  

 

 

 

Catfish Atchafalaya 

 

 

 

1 green bell pepper

1 red bell pepper

1 yellow bell pepper

1 white onion

1 lb of large peeled and deveined shrimp

1 cup of heavy whipping cream

1/2 cup of grated Parmesan

2 tbs of shaved Parmesan

1 table spoon of salt

1 table spoon of pepper

1 table spoon of garlic powder

Cajun seasoning(to taste)

Catfish fillets

2 lemons

Extra long grain rice
